Well, it happens to me every now and then.
For example when I made this super tasty Tilapia with capers, tomatoes and spinach. It was just... exactly what I was looking for... fresh veggies mixed together in a fabulous way, a great piece of fresh fish... so yummy. And, it was so easy - took ten minutes!
Here's how I made it!
Assemble ingredients...
...add olive oil to a pan and start pan-frying the tilapia, 2-3 minutes each side...
...once done cooking, move to a plate and cover to keep warm...
...in same pan, add some more olive oil and start sauteeing the onions...
...after a few minutes of cooking, add minced garlic, cook for one more minute, and then add the white wine...
...stirring to combine...
...then add the diced tomatoes, capers and crushed red pepper flakes. Cook for 3 more minutes...
...now add the spinach (no need to chop it, as it will wilt)... and stir, cooking for another 3 minutes...
...until it is nicely wilted...
...add salt and pepper to taste, then pour on top of your fish and inhale!
...here's a close up of the first bite I took... so yummy!
Super quick, so healthy, and GREAT flavor? Brilliant.

Ingredients
4 teaspoons olive oil, divided
4 tilapia fillets (I did 4-5 ounces per fillet)
1 small onion, diced
2 garlic cloves, minced

1/2 cup white wine (I went with Sauvignon Blanc)
1 cup diced Roma tomatoes
2-3 T capers (I LOVE capers, so I add a LOT)
1/4 teaspoon dried crushed red pepper
2 cups fresh baby spinach leaves
Salt and pepper, to taste
Directions1. In a large skillet heat 2 T olive oil over a medium-high heat.

3. In same pan, add more olive oil, add diced onion and saute for 2 minutes. Add garlic, stir to combine and cook for one more minute.
4. Add wine, cook for 2 minutes until half the liquid is gone.
